Simple Korean Beef Bowls with Homemade Kimchi

This recipe was a HUGE hit with my family.  Even the kids loved it! Sweet and savory with a tangy kick from the kimchi.  This is sure to be one of your faves as well.  As with any recipe, alternative protein sources can be utilized.  Just be sure to count for this in your calorie tracking.


Korean Beef Bowls:

  • 1lb lean ground beef (or protein of your choice)
  • 3 garlic cloves, minced
  • 1-2 tablespoons minced fresh ginger
  • green onions for garnish
  • 1/2-1 yellow (sweet) onion
  • 3 tablespoons hoisin sauce
  • 1 tablespoon Mirin (rice cooking wine)
  • 3 tablespoons soy sauce
  • 1 tablespoon garlic chili paste
  • 1 tablespoon swerve granulated sweetener
  • cooking oil (sesame or olive oil)
  • eggs
  • sesame seeds for garnish
  • Optional: red pepper flakes to taste (if you like a little more spice)


  1. Heat oil in large skillet.  Add garlic, ginger, and onion.  Sauté until onions soften. Add the ground beef and cook through until all meat is browned.
  2. While ground beef is cooking, which together sauce ingredients: hoisin, Mirin, soy sauce, garlic chili paste, swerve. Add sauce to brown ground beef. 
  3. Remove beef from pan and set aside. Use same skillet to fry eggs.
  4. Serve beef over warm rice, top with fried egg and kimchi, garnish with sesame seeds, green onion, and chili flakes.  Enjoy!



Kimchi:

  • 1 head Napa cabbage
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh minced ginger
  • Shredded radish or shredded carrots, as much or as little as you would like
  • 1 bunch green onions
  • 2 tablespoons fish sauce
  • 1 tsp granulated suger (yes, the real thing.  This assists with fermentation)
  • 1/4 cup kosher salt
  • 1-2 tablespoons red pepper flakes (add more or less depending on how spicy you like your kimchi)
  • water


  1. Thinly slice cabbage.  Wash and place in deep dish. With gloved hands work 1/4 cup kosher salt into cabbage.  This will stat pulling liquid from the cabbage, this is normal.  Add water, just enough to cover the cabbage and let rest while you prepare the other ingredients.
  2. Mince garlic and ginger.  Mix with fish sauce, sugar, and red pepper flakes.  Stir to combine all ingredients.
  3. slice green onion, shred carrots. Set aside.
  4. Drain and rinse cabbage.  Rinse 3-4 times in cold water.  Place cabbage back in soaking bowl.  Add green onion, radish, and carrots.  Mis well. 
  5. With GLOVED hands, add mixed sauce to cabbage and incorporate well.  Message cabbage with GLOVED hands.
  6. Pack cabbage into container, pressing down to fill spaces.  Be sure to add remaining liquid to the container. Cover and refrigerate.  Leave room for additional fluid expansion.
